Is the older binary Office format still a safe bet?

It opens everywhere, but it is a compatibility choice rather than a good one. The binary formats predate the XML packages, carry macro payloads that many mail servers strip on sight, and are being steadily deprecated by Microsoft itself. Use them when a specific piece of old software demands them, and the XML format otherwise. JPEG shares every JPG limitation — no alpha, generational loss on re-save — with the added nuisance of software that treats the two extensions differently.
Will the JPEG open directly in a browser?

Yes, and the DOC would not have. Browsers ship a decoder for JPEG and none for DOC, so a DOC link forces a download while a JPEG renders inline. That is usually the deciding factor when the file is going onto a web page rather than into an application. JPEG is the extension most cameras, scanners and Unix-origin software prefer, and it is universally recognised.
Can I convert only part of the DOC instead of all of it?

No. There is no page setting for DOC files, so every page is rendered as its own JPEG and you keep the ones you need. If you only want the first page, convert the DOC to PDF and then use the PDF to JPEG converter, whose Pages menu offers First page only.
Do I get one image per page?
