How much quality do I lose converting AIFF to Opus?

Some, and it is permanent — this is the one direction where information is genuinely thrown away. AIFF holds every sample exactly; Opus discards what a psychoacoustic model predicts you will not hear. At 192 kbps and above that prediction is good enough to be transparent on most material and most equipment. Keep the AIFF as your master, because you cannot get back to it from the Opus.
What bitrate does the Opus file end up at?

Opus is almost never supported by standalone hardware — assume software playback only, and expect car stereos to ignore it.

Why is the Opus file louder or quieter than the AIFF source?

No automatic gain change happens unless the normalize option is turned on. If you do hear a level shift, your audio player or media library may be applying ReplayGain or per-track normalization on playback — turn that off and the Opus sounds bit-identical to the AIFF (for lossless) or perceptually identical (for transparent lossy).
