How do I convert AIFF audio to AAC without losing quality?

How much quality do I lose converting AIFF to AAC?

Some, and it is permanent — this is the one direction where information is genuinely thrown away. AIFF holds every sample exactly; AAC discards what a psychoacoustic model predicts you will not hear. At 192 kbps and above that prediction is good enough to be transparent on most material and most equipment. Keep the AIFF as your master, because you cannot get back to it from the AAC.
What bitrate does the AAC file end up at?

Does the AIFF to AAC converter keep ID3 / metadata tags?

Yes — title, artist, album, year, track number, album art, BPM, replay-gain are read from the AIFF container and written into the equivalent fields on the AAC container. ID3v2 (MP3), Vorbis comments (OGG, FLAC), MP4 atoms (AAC, M4A), RIFF INFO (WAV), iXML chunks all map cleanly. WAV plays on everything but the file is huge. The device-target dropdown picks a safe AAC codec for the platform you specify. AAC sounds noticeably better than MP3 below 128 kbps and is the default audio track in MP4, YouTube, Apple Music and broadcast. AAC is patent-encumbered, and a handful of very old players still refuse it where they would accept an MP3.
Is my AIFF file private during conversion?

Why is the AAC file louder or quieter than the AIFF source?

No automatic gain change happens unless the normalize option is turned on. If you do hear a level shift, your audio player or media library may be applying ReplayGain or per-track normalization on playback — turn that off and the AAC sounds bit-identical to the AIFF (for lossless) or perceptually identical (for transparent lossy).
